So I bought the rookie one and the tourist one but I don’t think I’m able to select any of them? I don’t even know what difficulty i am on now that i’m out of the default, how exactly do I select which difficulty do I want to run with?

The default difficulty is rookie, as it can be seen here:
To change the difficulty, you must choose it from the skill tab just before playing a mission, here:
