How about a level where the final boss from each chicken invaders come in to attack you one by one. The final boss from CI2/3/4/5 all in one. They all have a slightly lower health than they originally do to make the level slightly easier unless you choose the superstar hero difficulty where they have extra health from before (around 15% extra) and then, if possible, the CIU boss as a finale to the level
