Sorting in paint shop differs depending on ship. Here is sorting of H&C 101:

And thats how sorting looks like on M408:

Cockpit
Shininess
Wing/Fuselage?
Front winglet/Pods?
etc

I think base things every ship has should be before other stuff like “Front winglet” because it’s more comfortable to use when you want to repaint ship as your previous.
